Menu for the New Year's table (Non-lenten dishes)

salads

Original salad "Herring under a fur coat" with an apple


Ingredients:

 

Herring fillet – 200 g
Beetroot – 2 pcs.
Potatoes – 3 pcs.
Carrots – 2 pcs.
Eggs – 4 pcs.
Apple (green) – 1 pc.
Onion – 1 pc.
Mayonnaise – 200 g
Lemon juice – 1 tbsp. l.


Cooking method:

Boil the potatoes, beets, carrots and eggs.
Cut the herring into cubes, lay out the first layer.
Peel the apple, cut into small cubes, and sprinkle with lemon juice.
Layers: onion, potato, apple, carrot, eggs, beetroot. Lubricate each layer with mayonnaise.
Garnish with grated beetroot and let stand for 2-3 hours.

 


Olivier with duck and cranberry sauce


Ingredients:

 

Duck fillet – 300 g
Potatoes – 3 pcs.
Carrot – 1 pc.
Eggs – 4 pcs.
Pickled cucumbers – 2 pcs.
Green peas – 1 jar
Mayonnaise – 150 g
Cranberry sauce – 50 g


Cooking method:

Bake the duck fillet in the oven at 180 °C until cooked, cool and cut into cubes.
Boil the potatoes, carrots and eggs. Cut them into cubes.
Mix all the ingredients, add cranberry sauce and mayonnaise, and stir.

 


Mimosa salad with cream cheese and fresh cucumber


Ingredients:

 

Canned fish (salmon or tuna) – 1 jar
Potatoes – 3 pcs.
Carrots – 2 pcs.
Eggs – 4 pcs.
Cream cheese - 150 g
Fresh cucumber – 1 pc.
Onion – 1 pc.
Mayonnaise – 100 g


Cooking method:

Boil the potatoes, carrots and eggs.
Mash the fish with a fork. Chop the onion finely. Grate the cucumber on a coarse grater, squeeze it out slightly.
Lay out the layers: potatoes, fish, cream cheese, onion, carrot, cucumber. Spread each layer with mayonnaise.
Decorate the top with grated egg yolks.

 


Salad with chicken and pineapples


Ingredients:

 

Chicken fillet – 300 g
Canned pineapples – 200 g
Hard cheese – 150 g
Eggs – 3 pcs.
Mayonnaise – 200 g
 

Cooking method:

Boil the chicken and eggs.
Cut the chicken into cubes, eggs and pineapples into slices.
Grate the cheese on a coarse grater.
Mix all the ingredients and season with mayonnaise.

 


Caesar salad with shrimp

 

Ingredients:

 

Shrimp – 300 g
Lettuce leaves – 200 g
Parmesan cheese – 100 g
Bread – 2 slices
Olive oil – 3 tbsp. l
Caesar sauce – 100 ml

 Cooking method:

Fry the shrimp in olive oil.
Cut the bread into cubes and dry it in a pan.
Arrange the lettuce leaves, shrimp, croutons and grated cheese.
Season with sauce before serving.

 


Salad with beef and mushrooms


Ingredients:

 

Beef (boiled) – 300 g
Champignons (fresh or pickled) – 200 g
Onion – 1 pc.
Carrot – 1 pc.
Mayonnaise – 200 g
Vegetable oil – 2 tbsp. l.

 Cooking method:

Cut the beef into thin slices, mushrooms into slices.
Fry the onion and mushrooms, let cool.
Grate the carrots.
Mix all the ingredients and season with mayonnaise.


HOT DISHES

Baked chicken with oranges

Ingredients:  

Chicken – 1.5 kg  
Oranges – 2 pcs
Garlic – 4 cloves  
Honey – 2 tbsp
Soy sauce – 3 tbsp. l.  

   Cooking method:  

Mix honey, soy sauce, juice of one orange and garlic.  
Marinate the chicken in the mixture for 2 hours.  
Place the chicken on a baking sheet and add the slices of the second orange.  
Bake at 180 °C for about 1.5 hours.  

 


Beef in French  

Ingredients:  

Beef – 500 g  
Onion – 2 pcs
Potato – 3 pcs
Cheese – 200 g  
Mayonnaise – 150 g  

Cooking method:  

Cut the beef into thin slices, chop it off.  
Lay out the layers: meat, onion, potato, cheese.  
Lubricate each layer with mayonnaise.  
Bake at 180 °C for about 50 minutes.  

 


Salmon in cream sauce  

Ingredients:  

Salmon fillet – 500 g  
Cream 20% – 200 ml  
Lemon – 1 piece
Garlic – 2 cloves  
 Butter – 20 g  

Cooking method:  

Fry the salmon fillets in butter until golden brown.  
Add cream, garlic, lemon juice.  
Simmer for 10-15 minutes.

Napoleon Cake
 

Ingredients:

 

Ready–made puff pastry - 500 g
Milk – 1 liter
Eggs – 3 pcs.
Sugar – 200 g
Flour – 3 tbsp
Vanilla – to taste


Cooking method:

Roll out the dough, bake the layers at 200 °C until golden brown.
Mix the milk, eggs, sugar, flour and vanilla, bring to a boil, cool.
Brush each layer with cream, decorate with crumbs from the dough.

 


Chocolate fondue

 

Ingredients:

 

Dark chocolate – 200 g
Butter – 150 g
Eggs – 3 pcs.
Sugar – 100 g
Flour – 50 g

Cooking method:

Melt the butter and chocolate in a water bath.
Beat eggs with sugar, add flour.
Mix everything and pour it into the molds.
Bake at 180 °C for 8-10 minutes.

 


Profiteroles with cream


Ingredients:

 

Flour – 1 cup
Water – 1 cup
Butter – 100 g
Eggs – 4 pcs.
Cream 33% – 200 ml
Powdered sugar – 100 g


Cooking method:

Bring the water and butter to a boil, add the flour, and mix.
Cool the dough, add the eggs one at a time.
Bake the balls at 200 °C for 20 minutes.
Whisk cream with powdered sugar, fill the cooled profiteroles.
