• 1 cup of warm kefir / ryazhenka
• 2 eggs
• 1 cup of boiling water 100 C
• 1 ladle of vegetable oil
• 1 cup flour 
• 1 pinch of salt
• 1 pinch of soda
• 1 tablespoon of sugar

Cooking method:
We take kefir or ryazhenka (expired is also suitable, so we are looking for the oldest one available in the refrigerator)).
If there is a microwave oven, pour kefir into a dish suitable for use in a microwave oven and put it to warm for 0.5 – 1 minute (the time should be short so that the product does not curdle). 
In the absence of a microwave oven, we take out kefir / ryazhenka in advance and wait until it heats up to room temperature. 
We put the remaining ingredients in the specified sequence.
Mix thoroughly so that there are no lumps.

 
To prevent the dough from sticking, it is important to observe the proportions.

The thinner the dough is, the thinner the pancakes will be). 
In order to optimize the process, I fry pancakes on 2 pans at once)).


I do not add oil to the pan, because it is already in the dough.  
It is important not to overcook the pancake, because it is very thin and will become dry and brittle after overcooking. 
When laying out ready-made pancakes, if desired, we smear with butter.
