In autumn, I want more comfort and warmth. In November, the desire to stay at home is only growing. Therefore, keep the recipe for an airy lemon-poppy cake for a cozy evening 🥧

We will need: 

4 eggs 
140 grams of sugar 
100 g flour 
4 g baking powder
50 g vegetable oil 
25 g of poppy seeds 
Zest of 1 lemon 

For custard:

1 egg
1 cup of milk 
1.5 tablespoons flour 
70 g of sugar 
50 g butter 
1 pinch of vanilla 

Let's start with the preparation of the cream 🧁

We spread the oil so that it melts. 

Mix flour, sugar and vanilla in a saucepan. 
Add the egg. Then we rub everything. 
Gradually pour in the milk, while whipping with a whisk. 

We put the saucepan on low heat. 
Constantly whisk the cream with a whisk.
When it starts to boil, we immediately remove it from the stove. 

Let the mixture cool down a little. 
Put the butter in the warm cream, it should be slightly melted. 
Whisk again. 

Cover the pan with cling film and let it cool completely. 


While the cream cools down, we proceed to the cupcake 🍰

Beat the eggs with sugar until fluffy.
Add flour, baking powder and butter 🧈 
It is better to mix with a spatula. 
Add the poppy seeds and lemon zest (leave a little for decoration). Knead the dough with a spatula. 

Preheat the oven to 180 degrees. 
The finished dough is poured into a mold and sent to the oven for 25-30 minutes. 

We take the cupcake out of the mold. Let it cool down a little. 
Pour out the custard. Distribute with a spatula. Sprinkle with zest on top for decoration 🍋
